Easy Creamy No-Churn Salted Caramel Ice Cream

A quick and fuss-free no-churn ice cream recipe featuring a smooth, creamy texture with luscious salted caramel ribbons. Perfect for busy schedules and last-minute desserts.

Ingredients

  • 2 cups (480 ml) heavy whipping cream, cold
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 3/4 cup (180 ml) salted caramel sauce (store-bought or homemade)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • Optional: 1/2 cup (60 g) chopped toasted pecans or walnuts
  • Optional: dark chocolate chips
  • Optional: extra caramel sauce for drizzling

Instructions

  1. Chill your mixing bowl and beaters in the fridge for about 15 minutes.
  2. Pour 2 cups (480 ml) of cold heavy whipping cream into the chilled bowl. Beat on medium-high speed until soft peaks form, about 3–4 minutes.
  3. In a separate bowl, mix 1 can (14 oz / 397 g) sweetened condensed milk with 1 teaspoon vanilla extract and 1/4 teaspoon sea salt.
  4. Gently fold the sweetened condensed milk mixture into the whipped cream using a spatula, taking about 2 minutes to keep as much air as possible.
  5. Pour 3/4 cup (180 ml) salted caramel sauce over the mixture and create soft folds and swirls without overmixing to keep visible caramel ribbons.
  6. If using, gently fold in chopped nuts or chocolate chips now.
  7. Spoon the mixture into a loaf pan or freezer-safe container. Smooth the top and drizzle extra caramel sauce on top if desired.
  8. Cover with plastic wrap or a lid and freeze for at least 6 hours, preferably overnight.
  9. Before serving, let the ice cream sit at room temperature for 5 minutes for easier scooping and creamier texture.

Notes

Use cold equipment for best whipping results. Fold ingredients gently to preserve airiness. Warm caramel sauce slightly if too thick for better swirling. Let ice cream soften 5 minutes before serving for easier scooping. Store in airtight container up to 2 weeks. For dairy-free, substitute heavy cream with coconut cream and use vegan caramel sauce.
