  • 1 cup (240ml) milk (whole, oat, or almond)
  • 1 medium very ripe banana
  • 3 tablespoons (48g) creamy peanut butter
  • 1–2 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, chopped peanuts, dark chocolate chips, cinnamon, coconut flakes

Instructions

  1. Mash the ripe banana thoroughly with a fork in your jar or a small bowl until mostly smooth with a few tiny lumps.
  2. Add the milk, maple syrup, and vanilla extract. Whisk or stir until the banana is fully incorporated into the liquid.
  3. Spoon in the peanut butter and stir vigorously until fully dissolved into the milk mixture. If the peanut butter is stiff, warm it in the microwave for 10-15 seconds first.
  4. Stir in the rolled oats, chia seeds (if using), and a pinch of salt. Mix until everything is evenly combined and the oats are fully submerged in the liquid. Add a splash more milk if needed.
  5. Seal the jar with a lid and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats well. If too thick, stir in a tablespoon or two of milk. Top with sliced banana, extra peanut butter, and other desired toppings. Serve cold or microwave for 30-45 seconds if you prefer warm oats.

Notes

Use a very ripe banana with brown spots for maximum sweetness. Do not use quick oats or steel-cut oats; rolled oats are essential. Mash the banana into the milk first for even distribution. The oats will keep in the fridge for up to 5 days. For meal prep, make up to 4 jars at once and store without toppings.
