  • 1 pound thin-cut bacon
  • 1 cup packed light brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional)
  • Pinch of salt
  • Fresh parsley or chives, finely chopped (for garnish, optional)
  • Toasted sesame seeds (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper or aluminum foil, then place a wire cooling rack on top.
  2. Cut the bacon slices into thirds. Drain the little smokies and pat them dry with paper towels.
  3. Wrap each little smokie with a piece of bacon, overlapping slightly, and secure with a toothpick. Place on the wire rack, leaving space between each for air circulation.
  4. Bake for 15 minutes to allow the bacon to render and start crisping.
  5. While the smokies bake, make the glaze: In a small bowl, combine the brown sugar, maple syrup, smoked paprika, garlic powder, cayenne (if using), and a pinch of salt. Stir into a thick paste.
  6. After 15 minutes, remove the pan from the oven. Brush the glaze evenly over each bacon-wrapped smokie.
  7. Return to the oven and bake for another 10-15 minutes, watching closely to prevent burning. The bacon should be deeply browned and crispy, and the glaze bubbling and caramelized.
  8. Let cool on the rack for 5 minutes before serving. Transfer to a platter, garnish with parsley or sesame seeds if desired, and serve warm.
