Easy Crispy Maple Delicata Squash with Creamy Dressing

Crispy, caramelized delicata squash roasted with maple syrup and served with a cool, tangy Greek yogurt dressing. No peeling required, ready in about 35 minutes.

  • 2 medium Delicata squash (about 1.5 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 45 sprigs fresh thyme (optional)
  • ½ cup plain Greek yogurt (full-fat or 2%)
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • 1 teaspoon honey or maple syrup (optional)
  • ¼ cup pomegranate arils (optional, for garnish)
  • 2 tablespoons toasted pumpkin seeds (optional, for garnish)
  • Fresh parsley or microgreens (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash the Delicata squash thoroughly. Cut off both ends, then slice the squash in half lengthwise. Use a spoon to scoop out the seeds and stringy bits. Slice each half into ½-inch thick half-moons.
  3. In a medium bowl, combine the maple syrup, olive oil, salt, pepper, and garlic powder. Add the squash slices and toss gently until every piece is coated.
  4. Spread the squash slices in a single layer on the prepared baking sheet, making sure they are not touching.
  5. Roast for 10 minutes. Flip each piece over with tongs, then continue roasting for another 10-15 minutes, until edges are golden brown and crispy and flesh is tender.
  6. While the squash roasts, make the dressing: In a small bowl, combine the Greek yogurt, lemon juice, garlic powder, salt, and fresh thyme. Whisk until smooth and creamy. Taste and adjust seasonings. Set aside in the refrigerator.
  7. When the squash comes out of the oven, let it rest on the pan for 2-3 minutes.
  8. Arrange the roasted squash on a serving platter. Drizzle the creamy dressing over the top, or serve it on the side for dipping. Garnish with pomegranate arils, toasted pumpkin seeds, and fresh herbs if desired. Serve warm or at room temperature.

Notes

For extra crispy edges, broil the squash for the last 1-2 minutes of cooking, watching carefully to prevent burning. If your squash slices are thicker than ½ inch, add a few minutes to the roasting time. Pat the squash dry after washing to ensure crispy edges. The dressing can be made up to 3 days ahead and stored in the refrigerator.
