  • 1 medium tomato, thinly sliced
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter for pan-frying

Instructions

  1. Cook the bacon: Place 4 strips in a cold pan, then turn heat to medium. Cook until crisp, about 6-8 minutes, flipping occasionally. Transfer to paper towels to drain and crumble once cooled.
  2. Prep the veggies: Wash and finely chop 1 cup romaine lettuce. Slice 1 medium tomato thinly. Pat lettuce dry to avoid soggy roll-ups.
  3. Mix the spread: In a small bowl, combine 3 tablespoons mayonnaise and 1 teaspoon Dijon mustard. Stir well and season lightly with salt and pepper.
  4. Assemble the roll-ups: Lay one flour tortilla flat. Spread about 1 tablespoon of the mayo mixture evenly over the surface, leaving a small border.
  5. Add layers: Place 2 ounces (about 4 slices) of deli turkey evenly on the tortilla. Sprinkle 1 ounce shredded cheddar cheese, followed by a handful of chopped lettuce, 2-3 tomato slices, and crumbled bacon (about 1 strip per tortilla).
  6. Roll tightly: Starting at one edge, roll the tortilla firmly but gently to avoid tearing. Use a sharp knife to slice into 1-inch pinwheels. Set aside on a plate.
  7. Pan-fry for crispiness: Heat 1 tablespoon olive oil or butter in a non-stick skillet over medium heat. Place pinwheels cut-side down and cook for 2-3 minutes until golden and crispy. Flip carefully and crisp the other side for another 2 minutes.
  8. Drain and cool: Transfer cooked pinwheels to a paper towel-lined plate to drain excess oil. Let cool slightly before packing in lunchboxes.
