  • 2 cups cooked and shredded chicken (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo sauce (Frank’s RedHot Original recommended)
  • 2 tablespoons ranch or blue cheese dressing (optional)
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
  • Sliced green onions for garnish (optional)

Instructions

  1. Shred the chicken: If using rotisserie chicken, pull meat off bones and shred with two forks. If cooking from scratch, boil chicken breasts for 15-18 minutes until cooked through, then shred. You should have about 2 cups.
  2. Soften the cream cheese: Let cream cheese sit at room temperature for 15-20 minutes, or microwave for 10-15 seconds.
  3. Combine in crockpot: Place shredded chicken, softened cream cheese (broken into chunks), and buffalo sauce in a 3-quart or larger slow cooker.
  4. Cook on low: Cover and cook on low for 1.5 to 2 hours. Stir after 45 minutes and again at 1 hour.
  5. Stir until smooth: Once cream cheese is fully melted and mixture is hot and bubbly, stir until completely combined. If too thick, add a tablespoon of milk or chicken broth. If too thin, cook uncovered for 15-20 minutes.
  6. Garnish and serve: Sprinkle with green onions or crumbled blue cheese if desired. Serve warm from the crockpot with tortilla chips, celery sticks, or crusty bread.

Notes

For best results, use room temperature cream cheese to avoid lumps. Don’t overcook on high heat or the cream cheese may separate. The dip can be prepped the night before by shredding chicken, cubing cream cheese, and measuring sauce. Store separately in fridge, then dump and cook. Leftovers keep in the fridge for up to 5 days and can be frozen for up to 3 months.
