  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 3 garlic cloves, minced

  • 1 cup plain Greek yogurt (full-fat)
  • 1/2 English cucumber, grated and drained
  • 2 garlic cloves, minced
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste
  • 2 cups cooked basmati rice or warm pita bread
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced (optional)
  • 1 cup chopped romaine lettuce
  • 1/4 cup crumbled feta cheese
  • Kalamata olives, pitted and halved (optional)

Instructions

  1. Prepare the chicken marinade by whisking together olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper in a medium bowl.
  2. Add the chicken thighs to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes up to 2 hours.
  3. Grate the cucumber and drain excess water using a colander or kitchen towel.
  4. In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Stir gently and refrigerate for at least 15 minutes.
  5. Heat a large skillet or grill pan over medium-high heat. Cook the marinated chicken for 4-5 minutes per side until internal temperature reaches 165°F (74°C).
  6. Remove chicken from heat and let rest for 5 minutes, then slice into bite-sized pieces.
  7. Assemble bowls by layering cooked rice or pita, romaine lettuce, cherry tomatoes, red onion slices, Kalamata olives, and sliced chicken.
  8. Top with generous dollops of tzatziki sauce and sprinkle with crumbled feta cheese.
  9. Optionally drizzle olive oil and fresh lemon juice over the bowls before serving.

Notes

Drain grated cucumber well to avoid watery tzatziki. Marinate chicken for at least 30 minutes for best flavor. Rest chicken after cooking to keep it juicy. Use fresh lemon juice for brightness. Cook chicken in batches if pan is crowded to ensure a good sear.
