Ingredients

Scale
  • 3 cups all-purpose flour (360 g), plus more for dusting
  • 1/4 cup granulated sugar (50 g)
  • 2 1/4 teaspoons instant yeast (one packet)
  • 1 teaspoon salt
  • 3/4 cup whole milk (180 ml), warmed to about 110°F (43°C)
  • 4 tablespoons unsalted butter (56 g), melted and cooled slightly
  • 1 large egg, room temperature
  • 6 tablespoons unsalted butter (85 g), softened (for filling)
  • 1/2 cup brown sugar (100 g), packed (for filling)
  • 2 tablespoons ground cinnamon (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1 cup powdered sugar (120 g) (for glaze)
  • 23 tablespoons milk or cream (3045 ml) (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Warm the milk to about 110°F (43°C). Mix the yeast and a pinch of sugar into the milk, then let it sit for 5 minutes until frothy.
  2. In a large bowl, combine flour, sugar, and salt. Add melted butter, egg, and the frothy yeast-milk mixture. Stir until a shaggy dough forms.
  3. Turn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Add flour if sticky but avoid making it too stiff.
  4. Place dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  5. While dough rises, mix softened butter, brown sugar, cinnamon, and vanilla in a bowl until smooth and spreadable.
  6. Punch down risen dough. Roll out on floured surface into a 12×16 inch (30×40 cm) rectangle. Spread cinnamon filling evenly over dough, leaving a small border.
  7. Starting from the long edge, tightly roll dough into a log. Cut log into 12 equal slices about 1 1/2 inches (4 cm) thick.
  8. Line a baking sheet with parchment paper. Arrange slices in a circle, slightly touching to form a wreath. Cover and let rise for 20-30 minutes until puffy.
  9. Preheat oven to 350°F (175°C). Bake wreath for 22-25 minutes until golden brown and cooked through.
  10. While wreath cools for 10 minutes, whisk powdered sugar, milk, and vanilla to make glaze. Drizzle glaze generously over warm rolls.

Notes

Use a kitchen thermometer to keep milk at 110°F for yeast activation. Knead dough well but avoid over-kneading. Use a serrated knife or dental floss to cut rolls to prevent squishing. Let rolls rise twice for best fluffiness. Cool rolls slightly before glazing to prevent glaze from melting off. Variations include adding nuts, dried fruit, or spices like nutmeg or cardamom. Vegan and gluten-free adaptations are possible.
