Ingredients

Scale
  • 1 pound soft pretzel bites (store-bought or homemade)
  • 2 cups mini pretzel twists
  • 1 cup pretzel sticks
  • 8 ounces sharp cheddar cheese (block)
  • 6 ounces Pepper Jack cheese (block)
  • 6 ounces smoked Gouda (block)
  • 4 to 6 ounces Brie cheese (wheel)
  • 6 ounces salami (thinly sliced)
  • 4 ounces prosciutto (thinly sliced)
  • 4 ounces pepperoni (sliced)
  • 1/2 cup yellow mustard
  • 1/2 cup honey mustard
  • 1 cup beer cheese dip (store-bought or homemade)
  • 1/4 cup spicy brown mustard
  • 1 to 2 apples (Granny Smith or Honeycrisp), sliced
  • 1 cup red or green grapes
  • 1/2 cup cornichons or dill pickle spears
  • 1/2 cup roasted almonds
  • A few dark chocolate squares

Instructions

  1. Start with the dips. Place small bowls on the board in a triangle pattern. Fill with beer cheese dip, honey mustard, and spicy brown mustard. Put yellow mustard in a smaller ramekin.
  2. Add the soft pretzel bites in a large cluster near one corner, stacking them slightly to form a small mountain.
  3. Cut cheddar and Pepper Jack into rough 1-inch cubes. Arrange in a line or cluster near the center. Fan smoked Gouda wedges like a deck of cards. Place the whole Brie wheel in a prominent spot.
  4. Fold salami slices into quarters and pile near the cheddar. Drape prosciutto in loose ribbons next to the Brie. Scatter pepperoni slices in a small cluster.
  5. Fill gaps with mini pretzel twists. Stand pretzel sticks upright in a small jar or lay them in a neat pile.
  6. Tuck apple slices between cheese and meats. Scatter grapes in small clusters. Place pickles near the pepperoni.
  7. Sprinkle roasted almonds in remaining gaps. Add dark chocolate squares near the Brie.
  8. Serve immediately at room temperature. Let cheeses sit out for 20 minutes before serving if refrigerated. Provide small plates and napkins.

Notes

Prep all components ahead of time and assemble 30 minutes before serving. Toss apple slices in lemon juice to prevent browning. Use a sheet pan if you don’t have a wooden board. For best flavor, let cheeses come to room temperature.
