  • 1/2 cup (120g) Greek yogurt (plain or vanilla; coconut yogurt for dairy-free)
  • 2 tablespoons honey or maple syrup (optional)
  • 1 tablespoon chia seeds
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large bowl, combine rolled oats, chia seeds, baking powder, and salt. Stir well to distribute evenly (about 2 minutes).
  2. In a separate bowl, mash the banana until smooth. Add peanut butter, milk, Greek yogurt, honey or maple syrup, and vanilla extract. Whisk until fully blended (3-4 minutes).
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined. Avoid overmixing; batter will be thick but spreadable (1-2 minutes).
  4. Spoon the batter evenly into a greased or lined 12-cup muffin tin, filling each cup about 3/4 full (about 5 minutes).
  5. Cover the muffin tin with plastic wrap or reusable lids and refrigerate for at least 6 hours or overnight to allow thickening.
  6. Remove oat cups from the tin and place on a parchment-lined baking sheet. Freeze for 2 hours, then transfer to a freezer-safe container or bag for storage.
  7. To serve, thaw overnight in the fridge or microwave for 30-45 seconds until warmed through. Add a splash of milk if texture is too dense.
