A quick and easy recipe for fluffy scrambled eggs and melty sharp cheddar cheese wrapped in soft flour tortillas, perfect for busy mornings and freezer-friendly for convenience.

Ingredients

Scale
  • 6 large eggs
  • 1 cup sharp cheddar cheese, shredded
  • 6 flour tortillas, 8-inch size
  • 2 tablespoons milk (whole or 2%)
  • 1 tablespoon unsalted butter
  • Salt and black pepper to taste
  • Optional: 1/4 cup diced bell peppers or onions
  • Optional: 1/2 cup cooked breakfast sausage or bacon
  • Optional: A handful of fresh cilantro or green onions

Instructions

  1. Crack the eggs into a mixing bowl, add the milk, and whisk until smooth and slightly frothy.
  2. Heat a non-stick skillet over medium-low heat and melt the butter without browning it.
  3. Pour the egg mixture into the skillet and stir gently with a spatula, scraping the bottom as it cooks, until soft, creamy curds form (about 7-8 minutes).
  4. When the eggs are nearly set but still shiny, sprinkle shredded cheddar cheese and fold in any optional ingredients like cooked sausage or diced veggies. Let the cheese melt as you finish cooking.
  5. Warm the tortillas on a dry skillet or microwave for 15 seconds to make them pliable.
  6. Spoon an even amount of the egg and cheese mixture onto each tortilla, leaving space at the edges. Fold in the sides and roll tightly from one end to the other.
  7. Wrap each burrito tightly in foil or parchment paper, then place in a freezer-safe bag or container. Label with the date and freeze for up to 3 months.
  8. To reheat, unwrap a frozen burrito, wrap it in a damp paper towel, and microwave on high for 90 seconds to 2 minutes. Alternatively, bake at 350°F (175°C) for 20-25 minutes for a crispier tortilla.

Notes

Cook eggs low and slow in butter to keep them tender and moist. Warm tortillas before rolling to prevent cracking. Wrap burritos tightly to avoid freezer burn. Burritos can be stored in the fridge for 2-3 days but are best frozen for longer storage. Optional ingredients can be added for variety and dietary preferences.
