A quick and easy shrimp stir-fry with a sweet honey garlic sauce, crisp snap peas, and fragrant jasmine rice. Perfect for a satisfying weeknight meal that balances flavor and simplicity.

  • 1 pound large shrimp, peeled and deveined (fresh or thawed frozen shrimp)
  • 2 cups fresh snap peas, trimmed
  • 1 1/2 cups uncooked jasmine rice
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil (canola or grapeseed)
  • 2 stalks green onions, thinly sliced (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse jasmine rice under cold water until water runs clear. Combine rinsed rice with 2 1/4 cups water and a pinch of salt in a medium saucepan. Bring to a boil over high heat, then reduce to low, cover, and simmer for 15 minutes. Turn off heat and let steam covered for 5 more minutes. Fluff with a fork before serving.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and red pepper flakes if using. Set aside.
  3. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add shrimp in a single layer, season with salt and pepper, and cook 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. Add remaining 1 tablespoon oil to the pan. Toss in snap peas and cook, stirring frequently, for 2-3 minutes until bright green and just tender but still crisp.
  5. Return shrimp to the pan with snap peas. Pour honey garlic sauce over everything. Stir continuously for 2-3 minutes until sauce thickens slightly and coats shrimp and peas evenly. Watch closely to avoid burning garlic.
  6. Taste and adjust seasoning with salt or more soy sauce if needed. Remove from heat and sprinkle sliced green onions on top.
  7. Serve shrimp and snap peas over jasmine rice immediately.

Notes

Do not overcrowd the pan when cooking shrimp to avoid steaming and rubbery texture. Stir sauce constantly once added to prevent burning. Rinse jasmine rice to prevent mushiness. Fresh garlic is preferred over pre-minced for best flavor. If sauce thickens too quickly, add a splash of water to loosen it.
