A fun and quick breakfast skillet featuring a bell pepper carved like a jack-o’-lantern, filled with a sunny-side-up egg and melted cheese. Perfect for busy mornings or a Halloween-themed brunch.

  • 1 large bell pepper (orange or yellow)
  • 2 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon butter or olive oil
  • Salt and black pepper to taste
  • 1/4 teaspoon smoked paprika (optional)
  • Fresh chives or green onions for garnish (optional)
  • Red pepper flakes for garnish (optional)
  • Hot sauce for serving (optional)

Instructions

  1. Wash and dry the bell pepper. Slice off the top about 1/2 inch from the stem, remove seeds and membranes, then slice a thick ring (1 to 1.5 inches wide). Carve a simple jack-o’-lantern face into one side of the ring.
  2. Heat a 10-inch non-stick skillet over medium heat and add butter or olive oil. Swirl to coat.
  3. Place the pepper ring in the skillet and cook for about 2 minutes per side until softened and lightly charred.
  4. Crack one egg into a small bowl, then gently slide it into the center of the pepper ring.
  5. Season the egg with salt, black pepper, and smoked paprika if using. Cover the skillet with a lid or foil and cook for 3-4 minutes for a runny yolk, or 5-6 minutes for a set yolk.
  6. Sprinkle shredded cheddar cheese over the egg and pepper ring. Cover again for 30 seconds to 1 minute until the cheese is melted.
  7. Carefully lift the pepper ring and egg out of the skillet with a spatula. Serve immediately, garnished with chives, red pepper flakes, or hot sauce if desired.

Notes

For best results, cook the pepper ring first to soften it before adding the egg. Use a lid to cook the top of the egg without flipping. Prep the pepper ring the night before to save time in the morning.
