This creamy, cheesy corn casserole is made with Jiffy mix, cheddar cheese, and a few simple ingredients. It’s budget-friendly, kid-approved, and perfect for busy weeknights or holiday dinners.

  • 2 boxes (8.5 oz each) Jiffy Corn Muffin Mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) cream-style corn
  • 1 cup (8 oz) sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 cups shredded sharp cheddar cheese
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine the two boxes of Jiffy Corn Muffin Mix. Break up any clumps with a whisk or spoon.
  3. Add the drained whole kernel corn and cream-style corn. Stir gently until combined.
  4. Add the sour cream, melted butter, beaten eggs, salt, and pepper. Stir until just combined; do not overmix.
  5. Fold in 1 1/2 cups of the shredded cheddar cheese. Reserve the remaining 1/2 cup for the top.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
  8. Bake for 30-35 minutes, until the edges are golden brown and the center is set. If the top browns too quickly, tent with foil for the last 10 minutes.
  9. Let the casserole rest for 10 minutes before serving.

Notes

For best results, shred your own cheddar cheese from a block. Let the casserole rest for 10 minutes after baking to set. This recipe doubles easily; use a 9×13-inch dish and bake for 40-45 minutes.
