  • ⅓ cup (80ml) whole milk
  • 1 tablespoon fresh lemon zest
  • 1 teaspoon pure vanilla extract
  • 1 cup (150g) fresh or frozen blueberries
  • Coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your mini muffin pan or line with silicone liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar until evenly combined.
  3. In a separate bowl, whisk melted butter, egg, milk, lemon zest, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold with a spatula just until combined; do not overmix.
  5. Carefully fold in the blueberries, adding frozen blueberries straight from the freezer if using.
  6. Spoon the batter into the prepared mini muffin pan, filling each cup about 3/4 full.
  7. Optionally, sprinkle a pinch of coarse sugar over each muffin for a crunchy top.
  8. Bake for 14-16 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Notes
