Ingredients

  • Flour tortillas (6-inch size)

  • Butter or olive oil (for crisping)
  • Mild taco seasoning (optional)
  • Finely chopped veggies (bell peppers, spinach, optional)
  • Sour cream or guacamole (for dipping)
  • Cherry tomatoes and baby carrots (for sides)
  • Small containers (for dips or fruit like blueberries or grapes)

Instructions

  1. Gather your ingredients: measure about 1 cup (100 g) of shredded cheese and chop veggies finely if using.
  2. Heat a non-stick skillet over medium heat and add about 1 teaspoon (5 ml) of butter or oil. Warm for 1-2 minutes until hot but not smoking.
  3. Lay one tortilla flat on a clean surface. Sprinkle about 1/4 cup (25 g) of cheese over half the tortilla. Add a pinch of mild taco seasoning and chopped veggies if desired. Fold the tortilla over to create a half-moon shape.
  4. Transfer the folded quesadilla to the hot skillet. Cook for 2-3 minutes on the first side until golden and crispy. Flip carefully and cook the other side for another 2 minutes until cheese melts and tortilla crisps.
  5. Repeat assembling and cooking until all quesadillas are done, adding more butter or oil as needed. This takes about 10 minutes.
  6. Transfer cooked quesadillas to a cutting board and slice each into 3-4 mini wedges using a pizza cutter or sharp knife.
  7. Pack the mini quesadilla wedges in a bento box alongside fresh veggies, fruit, and small containers of dip like guacamole or sour cream.

Notes

Use medium heat to avoid burning tortillas. Butter adds richer flavor; olive oil is lighter. Shredding cheese from a block melts better than pre-shredded. Let quesadillas rest before slicing to help cheese settle. For gluten-free, use corn or gluten-free tortillas. For dairy-free, use vegan cheese alternatives. Reheat in skillet or toaster oven to keep crisp; avoid microwaving.
