  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Measure out all ingredients: 1 cup sunflower butter, 1 1/2 cups rolled oats, 1/4 cup honey, 1/4 cup ground flaxseed (optional), 1/4 cup mini chocolate chips, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, and a pinch of salt.
  2. In a large bowl, mix oats, ground flaxseed, cinnamon, salt, and mini chocolate chips evenly.
  3. Add sunflower butter, honey, and vanilla extract to the dry mix and stir with a spoon or spatula until sticky and thick.
  4. Adjust consistency if needed: add more sunflower butter or a teaspoon of water if too dry; add more oats if too wet.
  5. Roll mixture into 1-inch diameter balls, about 15-18 bites.
  6. Place bites on a baking sheet or plate lined with parchment and chill in the refrigerator for at least 30 minutes to firm up.
  7. Store bites in an airtight container in the fridge for up to a week or freeze for longer storage.
