A moist, delicious banana bread made with simple ingredients in a single bowl. This easy recipe uses ripe bananas, walnuts, and basic pantry staples for a perfect breakfast or snack.

Ingredients

Scale
  • 3 medium to large ripe bananas (skins mostly black or dark brown)
  • 1/2 cup (113 grams) unsalted butter, melted
  • 1 large egg, room temperature
  • 3/4 cup (150 grams) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (50 grams) walnuts, roughly chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper and lightly grease.
  2. Peel bananas and mash them in a large mixing bowl until almost smooth.
  3. Stir in melted butter, sugar, egg, and vanilla extract until the mixture is smooth and glossy.
  4. Add flour, baking soda, and salt to the wet ingredients. Fold gently with a wooden spoon until just combined; do not overmix.
  5. Stir in chopped walnuts.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  8. Cool in the pan for 10 minutes, then lift out using parchment paper and cool completely on a wire rack.

Notes

Use very ripe bananas for maximum sweetness and moisture. Do not overmix the batter to avoid a tough texture. Toasting walnuts beforehand enhances their flavor. Can be substituted with gluten-free flour or dairy-free butter for dietary restrictions.
