Easy One-Pot Beer Cheese Pretzel Dip for Oktoberfest

This creamy, velvety, foolproof beer cheese dip comes together in one pot and tastes like you spent hours on it. Perfect for Oktoberfest parties, game days, or a cozy night in.

Ingredients

  • 1 bottle (12 oz) Oktoberfest or dark lager beer
  • 8 oz sharp cheddar cheese, freshly shredded
  • 4 oz smoked gouda cheese, freshly shredded
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Optional toppings: chopped fresh chives, crispy bacon bits, or a dash of extra smoked paprika

Instructions

  1. Shred your cheeses. Grate the cheddar and gouda on the large holes of a box grater. Set them aside to come to room temperature.
  2. Open your beer and let it sit. Pour the beer into a measuring cup and let it sit for 5-10 minutes to lose some of its carbonation.
  3. Melt the butter. Place your pot over medium-low heat and add the butter. Let it melt slowly.
  4. Make the roux. Once the butter is melted, whisk in the flour. Stir constantly for about 1 minute until the mixture is smooth and bubbly.
  5. Add the milk and beer. Slowly pour in the milk while whisking, then add the beer. Continue whisking until the mixture is smooth and begins to thicken, about 3-4 minutes.
  6. Season the base. Whisk in the Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, and a pinch of black pepper. Stir until combined.
  7. Lower the heat. Reduce the heat to low. You want the mixture warm, not hot.
  8. Add the cheese gradually. Take a handful of shredded cheese and sprinkle it into the pot while stirring constantly. Wait until it’s almost completely melted before adding the next handful. Repeat until all the cheese is incorporated, about 5-7 minutes.
  9. Stir in the lemon juice. Once all the cheese is melted and the dip is smooth, stir in the lemon juice.
  10. Taste and adjust. Add salt if needed. If the dip seems too thick, stir in a splash of milk. If it’s too thin, let it cook on low for another minute or two, stirring constantly.
  11. Serve immediately. Pour the dip into a serving bowl, garnish with chives or bacon if you like, and serve warm with soft pretzels, pretzel bites, or crusty bread.

Notes

Low heat is crucial to prevent the cheese from breaking. Shred your own cheese for the smoothest texture. Avoid hoppy beers like IPAs. If the dip breaks, remove from heat and stir in a splash of cold milk or lemon juice. The dip can be made up to 2 days ahead and reheated gently.
