Easy One-Pot Creamy Pumpkin and Sausage Soup

A savory, velvety soup made with spicy Italian sausage and creamy pumpkin puree, all cooked in one pot for a quick and comforting weeknight dinner.

  • 1 lb Italian sausage (spicy or sweet)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (15 oz) 100% pure pumpkin puree
  • 4 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add Italian sausage (casings removed if using links) and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Transfer sausage to a plate using a slotted spoon, leaving about 1 tablespoon of fat in the pot.
  2. Reduce heat to medium. Add diced onion to the pot and cook until soft and translucent, about 3 minutes. Add minced garlic and cook for 30 seconds until fragrant, stirring constantly.
  3. Sprinkle dried thyme and smoked paprika over the onions. Stir for about 1 minute until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the pot. Bring to a gentle simmer.
  5. Whisk in pumpkin puree until completely smooth and incorporated.
  6. Return the browned sausage to the pot. Stir, bring to a gentle boil, then reduce heat to low. Cover and simmer for 15 minutes, stirring occasionally.
  7. Remove pot from heat. Stir in heavy cream until fully incorporated. Taste and season with salt and black pepper as needed.
  8. Let the soup rest off the heat for 5 minutes before serving. Ladle into bowls and enjoy.

Notes

For best texture, let sausage come to room temperature for 15 minutes before cooking. Do not skip browning the sausage for deep flavor. When adding cream, ensure soup is off the heat to prevent curdling. Soup tastes even better the next day. Freezes well for up to 3 months.
