A cozy and effortless breakfast casserole made by soaking cinnamon rolls in a spiced custard overnight, then baking to a golden, custardy perfection. Perfect for busy mornings or special occasions.

  • 1 package (about 8 rolls) cinnamon rolls, store-bought or homemade, cut into quarters
  • 6 large eggs, room temperature
  • 2 cups (480 ml) milk, whole or 2%
  • 1/2 cup (120 ml) heavy cream (optional, can substitute with extra milk)
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons packed brown sugar
  • A pinch of salt
  • 2 tablespoons melted butter, for brushing or drizzling on top
  • Powdered sugar and maple syrup, for serving (optional)

Instructions

  1. Cut each cinnamon roll into quarters, then spread them evenly in a greased 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together 6 large eggs, 2 cups milk, 1/2 cup heavy cream (if using), 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, 2 tablespoons packed brown sugar, and a pinch of salt until smooth and fully combined.
  3. Slowly pour the egg mixture evenly over the cinnamon roll pieces, pressing lightly with a spatula to ensure they soak up the custard well. Let it sit for about 10 minutes at room temperature to absorb.
  4. Cover the dish tightly with plastic wrap or foil, then refrigerate for at least 6 hours or overnight.
  5. Preheat oven to 350°F (175°C).
  6. Remove the casserole from the fridge, uncover, and drizzle or brush 2 tablespoons of melted butter evenly over the top.
  7. Place the casserole on the middle rack and bake for 45 to 50 minutes until the top is golden brown and the custard is set but still slightly jiggly in the center.
  8. Insert a knife or toothpick into the center; it should come out clean or with just a few moist crumbs.
  9. Let the casserole rest for about 10 minutes before serving.
  10. Dust with powdered sugar and drizzle with warm maple syrup before serving.

Notes

Do not skip the overnight soak for best custardy texture. Use room temperature eggs for smooth custard. Tent with foil if top browns too fast. Let casserole rest after baking for easier slicing. For dairy-free, substitute milk and cream with almond or oat milk and coconut cream, and use vegan butter.
