  • 2 cups (8 ounces) shredded Mexican blend cheese
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1 pound ground beef (80/20 blend)
  • 1 packet (3 tablespoons) taco seasoning
  • 1/3 cup water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 medium Roma tomatoes, diced (seeds removed if desired)
  • 23 jalapeños, sliced into rings (pickled or fresh)
  • 1/2 cup sliced black olives
  • 1/2 medium red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream
  • 1 cup guacamole or 2 avocados, sliced
  • 1/2 cup salsa or pico de gallo
  • Optional: pickled red onions, crumbled cotija cheese, hot sauce, crushed tortilla chips

Instructions

  1. Preheat your oven to 400°F (200°C). Position the oven rack in the middle. Line a large sheet pan (13×18 inch) with parchment paper or aluminum foil.
  2. Cook the ground beef: Place a large skillet over medium-high heat. Add the ground beef and break it apart with a spatula. Cook for 6-8 minutes, stirring occasionally, until browned and no longer pink. Drain excess fat if needed, leaving about 1 tablespoon for flavor. Reduce heat to low.
  3. Season the beef: Sprinkle the taco seasoning over the cooked beef and add 1/3 cup water. Stir and let simmer for 2-3 minutes until the liquid thickens into a saucy coating. Set aside.
  4. Layer the chips: Spread the tortilla chips evenly across the prepared sheet pan in a single layer, overlapping slightly.
  5. Add the first layer of cheese: Sprinkle half of the Mexican blend cheese and half of the cheddar cheese evenly over the chips.
  6. Distribute the beef and beans: Spoon the seasoned ground beef evenly over the cheese-covered chips. Scatter the drained black beans across the pan.
  7. Add the remaining cheese: Sprinkle the rest of the Mexican blend and cheddar cheese over the beef and beans.
  8. Bake the nachos: Place the sheet pan in the preheated oven and bake for 10-12 minutes, until the cheese is fully melted and the edges of the chips are light golden brown.
  9. Add fresh toppings: Remove from the oven and let rest for 2 minutes. Scatter the diced tomatoes, sliced jalapeños, black olives, and red onion over the hot nachos.
  10. Finish with cold toppings: Dollop spoonfuls of sour cream and guacamole or sliced avocado across the pan. Drizzle salsa or pico de gallo over the top. Sprinkle fresh cilantro and any optional extras.
  11. Serve immediately: Place the sheet pan in the middle of the table with small plates and napkins. Let everyone dig in directly from the pan.

Notes
