  • 1.5 lbs Yukon Gold potatoes, cut into 3/4-inch cubes
  • 1 lb smoked sausage (beef or pork, like kielbasa or andouille), cut into 1/2-inch rounds
  • 1 red bell pepper, cored and cut into 1-inch chunks
  • 1 green bell pepper, cored and cut into 1-inch chunks
  • 1 large yellow onion, cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Parboil the potatoes: Place cubed potatoes in a large pot, cover with cold water by 1 inch, add a generous pinch of salt. Bring to a boil, then reduce to a simmer and cook for 5-7 minutes until fork-tender. Drain and let steam dry.
  3. While potatoes boil, cut sausage into 1/2-inch rounds, bell peppers and onion into 1-inch chunks, and mince garlic.
  4. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add sausage in a single layer (work in batches if needed) and cook 2-3 minutes per side until browned. Transfer to a plate.
  5. Add remaining 1 tablespoon olive oil to the skillet. Add onions and bell peppers, cook 5-7 minutes until softened and starting to caramelize. Add garlic and cook 1 minute until fragrant.
  6. Return sausage to the skillet. Add parboiled potatoes. Sprinkle with smoked paprika, garlic powder, onion powder, dried thyme, salt, and pepper. Toss to combine.
  7. Transfer skillet to preheated oven and roast 15-20 minutes until potatoes are golden and crispy. For extra crispiness, broil for the last 2-3 minutes, watching carefully.
  8. Remove from oven, garnish with fresh parsley, and serve immediately or let cool for tailgating.

Notes

Parboiling the potatoes is essential for crispy edges. Pat potatoes dry after draining to ensure crispiness. Do not overcrowd the pan when browning sausage. Season in layers for deeper flavor. Let skillet rest 5 minutes before serving if eating at home. For tailgating, let cool completely before wrapping to avoid sogginess.
