  • 1/4 tsp salt
  • 2 cups mixed berries (blueberries, raspberries, blackberries), fresh or frozen (300g)
  • 1/3 cup granulated sugar (65g)
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang on the sides for easy bar removal.
  2. In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, granulated sugar, ground cinnamon, and salt. Mix until evenly combined.
  3. Cut the cold, cubed butter into the dry ingredients using a pastry cutter or two knives until the mixture resembles coarse crumbs with some pea-sized pieces.
  4. Press two-thirds of the oat mixture firmly and evenly into the bottom of the prepared pan to form the crust.
  5. In a separate bowl, gently toss the mixed berries with granulated sugar, lemon juice, cornstarch, and vanilla extract until well combined.
  6. Spread the berry mixture evenly over the pressed crust, covering all edges.
  7. Crumble the remaining oat mixture over the berry layer, distributing it evenly but allowing some gaps for a rustic look.
  8. Bake for 30-35 minutes or until the topping is golden brown and berry juices are bubbling around the edges. Tent with foil halfway through if topping browns too quickly.
  9. Cool completely in the pan on a wire rack to allow bars to firm up.
  10. Lift the bars out using the parchment overhang and cut into 12 squares. For cleaner slices, warm a sharp knife under hot water, dry it, and then slice.
