  • 8 ounces cream cheese, softened to room temperature
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 teaspoon salt
  • 1 tablespoon fresh chives or green onions, finely chopped (optional)
  • 4 large flour tortillas (10-inch size)
  • 12 slices deli turkey breast (about 8 ounces)
  • 8 slices cheddar cheese (medium or sharp)
  • 1 cup fresh spinach leaves (optional)

Instructions

  1. Make the cream cheese spread: In a small bowl, combine the softened cream cheese, mayonnaise, garlic powder, onion powder, black pepper, and salt. Stir until completely smooth and well-combined. If using chives or green onions, fold them in now. Taste and adjust seasoning.
  2. Prepare your work surface: Lay one tortilla flat on your cutting board. If tortillas are cold from the fridge, let them sit at room temperature for 10 minutes first.
  3. Spread the cream cheese mixture: Using a spatula, spread about 2 tablespoons of the cream cheese mixture evenly over the entire surface of the tortilla, going all the way to the edges.
  4. Layer the turkey: Place 3 slices of deli turkey evenly over the cream cheese, overlapping slightly. Cover the entire tortilla surface.
  5. Add the cheese: Lay 2 slices of cheddar cheese over the turkey, overlapping slightly. If using spinach leaves, arrange them in a single layer over the cheese now.
  6. Roll it up tight: Starting from one edge, roll the tortilla tightly toward the opposite edge. Use your fingers to keep the filling tucked in as you go. Roll firmly but don’t squeeze.
  7. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap it tightly, twisting the ends like a candy wrapper. Repeat with remaining tortillas. Refrigerate for at least 30 minutes (1 hour is better, overnight is ideal).
  8. Slice into pinwheels: When ready to serve, unwrap one roll at a time. Using a sharp knife, trim off the very ends (about 1/2 inch from each side). Then slice the remaining roll into 1-inch thick rounds using a gentle sawing motion.
  9. Pack and serve: Arrange the pinwheels in your lunchbox or serving platter. They should hold their shape beautifully.

Notes

Cream cheese must be softened to room temperature to avoid tearing tortillas. Chilling for at least 30 minutes is essential for clean slices. For best results, use full-fat cream cheese. Flavors develop and improve after a day in the fridge. Not recommended for freezing.
