  • 68 slices deli turkey per roll-up, low-sodium preferred
  • 46 slices cheddar cheese or preferred cheese per roll
  • 2 tablespoons cream cheese, softened, per tortilla
  • Handful fresh baby spinach leaves per roll (optional)
  • 1 tablespoon mayonnaise or mustard per roll (optional, alternative or combined with cream cheese)
  • Fresh herbs like parsley or chives, finely chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Lay a clean cutting board flat and gather all ingredients close by. Soften cream cheese if needed by microwaving briefly in 5-second bursts.
  2. Lay one 8-inch tortilla flat. Evenly coat the entire surface with about 2 tablespoons of cream cheese or mayo.
  3. Place 6-8 slices of deli turkey evenly over the tortilla, overlapping slightly but not piling too thick.
  4. Add 4-6 slices of cheddar or preferred cheese on top of the turkey. If using shredded cheese, sprinkle about 1/2 cup evenly.
  5. Scatter a handful of fresh baby spinach leaves over the cheese. Sprinkle chopped herbs if using. Season lightly with salt and pepper.
  6. Starting from one edge, carefully roll the tortilla tightly into a log shape.
  7. Wrap the rolled tortilla snugly in plastic wrap or parchment paper. Chill in the fridge for at least 10-15 minutes.
  8. Using a sharp serrated knife, cut the roll into 1-inch thick slices. Arrange on a plate or pack into lunch containers.
  9. Store in an airtight container in the fridge for up to 3 days. Serve chilled or at room temperature.

Notes

Use soft tortillas to avoid cracking. Warming tortillas briefly in the microwave wrapped in a damp paper towel softens them. Spread cream cheese or mayo evenly but not too thick. Roll tightly but gently to avoid squishing fillings. Chill wrapped roll-ups for at least 10-15 minutes before slicing to keep shape. Use a serrated knife and gentle sawing motion for clean cuts.
