A quick and easy sheet pan dinner featuring zesty lemon herb marinated chicken breasts roasted alongside tender summer vegetables. Perfect for a flavorful, fuss-free meal that feels special.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 2 lemons, zested and juiced
  • 3 tablespoons olive oil (extra virgin preferred)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 medium zucchini, sliced into half-moons
  • 1 red bell pepper, seeded and sliced into strips
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 tablespoon olive oil (to coat veggies)
  • Salt and pepper, to taste
  • Optional garnishes: fresh parsley or basil, chopped; lemon wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, whisk together lemon zest, lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper until well combined.
  3. Place the chicken breasts in the bowl with the marinade. Toss to coat evenly. Let it sit for at least 10 minutes (up to 30 minutes if time allows).
  4. In a separate bowl, toss zucchini, red bell pepper, cherry tomatoes, and sliced red onion with olive oil, salt, and pepper until lightly coated.
  5. Arrange the marinated chicken breasts in the center of a large rimmed baking sheet and spread the veggies around them in a single layer.
  6. Roast for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and slightly caramelized. Halfway through (around 12 minutes), gently toss the veggies and flip the chicken with tongs.
  7. Remove the pan from the oven and let the chicken rest for 5 minutes before slicing.
  8. Garnish with freshly chopped parsley or basil and serve with lemon wedges.

Notes

Pat chicken dry before marinating to help marinade stick and promote browning. Use room temperature chicken for even cooking. Flip chicken halfway through roasting for even browning. Cover chicken loosely with foil during last 5 minutes if veggies cook too fast. Fresh lemon zest is key for bright flavor. Use parchment paper on baking sheet for easier cleanup.
