  • 1 ½ cups whipped cream, lightly sweetened
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)
  • Fresh mint sprigs for garnish (optional)

Instructions

  1. Cut about 8 ounces of vanilla pound cake into roughly 1-inch cubes and set aside.
  2. Using a small star-shaped cookie cutter, cut star shapes out of strawberry slices, aiming for about 12-15 stars.
  3. Gently rinse blueberries and raspberries, then pat dry on paper towels.
  4. In a chilled mixing bowl, combine 1 ½ cups heavy cream with 1 tablespoon powdered sugar, 1 teaspoon vanilla extract, and optional lemon zest. Whip until soft peaks form.
  5. In clear cups, layer ¼ cup cake cubes, 2 tablespoons whipped cream, and 3 tablespoons mixed berries (blueberries, raspberries, and sliced strawberries). Repeat layers until cups are full.
  6. Top with a dollop of whipped cream, star-shaped strawberries, and a mint sprig.
  7. Refrigerate parfaits for at least 30 minutes before serving to let flavors meld and cake soften.

Use dairy-free whipped topping for vegan or lactose-free option. Substitute gluten-free cake for gluten-free diet. Dry berries well to avoid soggy layers.
