These brownies combine a fudgy, dense chocolate base with the surprising crackle of Pop Rocks candy, creating a playful and nostalgic dessert experience perfect for celebrations and casual treats.

  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ¾ cup (65g) unsweetened cocoa powder
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon espresso powder (optional)
  • ½ teaspoon salt
  • 2 small packets (about 10g total) Pop Rocks candy

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch (23×23 cm) square baking pan with parchment paper or foil, leaving some overhang for easy brownie removal.
  2. In a large bowl, whisk together the melted unsalted butter and granulated sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, sift together the cocoa powder, all-purpose flour, espresso powder (if using), and salt.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined. Do not overmix; a few streaks of flour are okay.
  5. Pour the batter into the prepared pan and smooth the top evenly. Bake for 25-30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs but no wet batter.
  6. Cool the brownies completely on a wire rack. Once cooled, sprinkle the Pop Rocks evenly across the top.
  7. Slice into squares using a sharp knife and serve immediately to maximize the popping effect.

Notes

Do not mix Pop Rocks into the batter as they will lose their fizz. Sprinkle them only on fully cooled brownies. To keep Pop Rocks crisp, avoid tightly covering brownies with plastic wrap; use a loose tent of foil or parchment instead. For gluten-free, substitute all-purpose flour with a 1:1 gluten-free baking blend. For vegan, replace butter with coconut oil and eggs with flax eggs.
