  • ½ cup (60 g) hazelnuts, roughly chopped or crushed
  • ½ cup (160 g) Nutella, room temperature
  • 4 large flour tortillas (10-inch/25 cm diameter)
  • Powdered sugar (optional, for dusting)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Brown the butter: Place 4 tablespoons (57 g) of unsalted butter in a medium non-stick skillet over medium heat. Stir constantly as the butter melts, foams, and then starts to turn golden brown, about 4 to 6 minutes. Remove from heat immediately once browned.
  2. Toast the hazelnuts: While the butter is browning, toast the hazelnuts in a dry skillet over medium heat for 3 to 4 minutes, tossing frequently until fragrant and lightly browned. Let cool and chop or crush roughly.
  3. Combine butter and hazelnuts: Pour the browned butter into a mixing bowl, add the toasted hazelnuts, and stir to combine. Let cool slightly but do not let it solidify.
  4. Prepare the tortillas: Lay out the 4 large flour tortillas on a clean surface. If using, mix 1 teaspoon vanilla extract into the Nutella. Spread about 2 tablespoons (30 g) of Nutella evenly over each tortilla, leaving a small border around the edges.
  5. Drizzle the brown butter hazelnut mixture: Spoon and spread the brown butter and hazelnut mixture over the Nutella layers on each tortilla.
  6. Roll and slice: Carefully roll each tortilla into a tight log. Use a sharp serrated knife to slice each log into 1-inch (2.5 cm) thick pinwheels, about 8 pinwheels per tortilla.
  7. Arrange and bake: Place the pinwheels cut side up on a parchment-lined baking sheet, leaving space between each. Bake in a preheated oven at 350°F (175°C) for 12 to 15 minutes, or until edges are golden and crispy.
  8. Cool and serve: Remove from oven and transfer to a cooling rack for 5 minutes. Dust with powdered sugar if desired and serve warm or at room temperature.
