  • 1 tablespoon finely diced red onion
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon fresh lime juice
  • Pinch of smoked paprika (optional)
  • Salt and freshly ground black pepper to taste
  • Optional toppings: shredded cabbage or lettuce, sliced jalapeños, shredded cheese

Instructions

  1. Prepare the Spicy Sriracha Relish: In a medium bowl, combine chopped dill pickles, sriracha sauce, mayonnaise, diced red onion, honey, lime juice, and smoked paprika if using. Mix well until creamy and evenly blended. Season with salt and pepper to taste. Set aside.
  2. Preheat the grill or grill pan over medium-high heat for about 5 minutes.
  3. Cook the hot dogs on the grill or pan for 6-8 minutes, rotating every couple of minutes until browned and blistered evenly.
  4. Lightly butter the insides of the buns if desired, then toast cut-side down on the grill or pan for 1-2 minutes until golden and crisp.
  5. Assemble the hot dogs by placing each cooked hot dog into a toasted bun. Spoon the spicy sriracha relish generously over the top. Add optional toppings like shredded cabbage, sliced jalapeños, or shredded cheese.
  6. Serve immediately while hot.

Notes

Adjust sriracha to control heat level; add extra mayo or honey to mellow spice. Toast buns last minute to prevent sogginess.
