Instructions

  1. In a medium bowl, whisk together honey, fresh lime juice, minced garlic, chili flakes, olive oil, salt, and pepper until well combined.
  2. Add the cubed chicken to the marinade, tossing gently to coat all pieces. Cover and refrigerate for at least 15 minutes, ideally 30 minutes to 1 hour.
  3. While the chicken marinates, combine diced mango, finely chopped red onion, minced jalapeño (if using), and fresh cilantro in a separate bowl. Drizzle with lime juice and sprinkle with salt. Stir gently and refrigerate until serving.
  4. Preheat grill to medium-high heat (375°F to 400°F). For charcoal grills, wait until coals are glowing without flames.
  5. Remove chicken from marinade and thread evenly onto soaked skewers, leaving space between pieces. Discard leftover marinade.
  6. Grill skewers for 4 to 5 minutes per side, turning once, until golden caramelized exterior with slight char and clear juices. Total grilling time about 12-15 minutes.
