  • 1/2 teaspoon vanilla extract
  • Ice cubes, enough to fill serving glass
  • Optional: black food coloring (a drop or two)
  • Optional: alternative milk like oat or almond (for dairy-free version)
  • Optional: 1 tablespoon matcha powder (for green witch hat twist)
  • Optional: 1 tablespoon honey (if using matcha)
  • Optional: pinch of cinnamon or pumpkin pie spice (for spiced foam)

Instructions

  1. Prepare your cold brew: Combine 1 cup (85 g) coarsely ground coffee with 4 cups (960 ml) cold water in a large jar or pitcher. Stir gently, cover, and steep in the fridge for 12 to 24 hours. Strain through a fine mesh sieve or coffee filter. If using store-bought, chill it in the fridge beforehand.
  2. Make the black sesame foam: In a chilled mixing bowl, combine 1/2 cup (120 ml) cold heavy cream with 2 tablespoons black sesame paste, 2 tablespoons powdered sugar, and 1/2 teaspoon vanilla extract.
  3. Whip the foam: Using an electric mixer on medium-high speed, whip the mixture until soft peaks form, about 3 to 4 minutes. The foam should hold its shape but still be creamy and spreadable. Add a drop of black food coloring if a darker foam is desired and whip briefly to incorporate.
  4. Assemble the drink: Fill a tall glass with ice cubes. Pour 1 cup (240 ml) of cold brew coffee over the ice.
  5. Top with black sesame foam: Gently spoon or pipe the foam on top of the cold brew, shaping it into a point or cone resembling a witch’s hat. Use a small offset spatula to smooth the sides and create a sharp peak if desired.
  6. Serve immediately with a straw or spoon. Stir to combine the nutty sesame flavor with the smooth coffee as you drink.

Notes

Use fresh, cold heavy cream and a chilled mixing bowl for best foam texture. If foam is too soft, chill for 5 minutes before topping. Re-whip foam for 30 seconds if it deflates. Black sesame paste can be smoothed in a blender if grainy. For vegan version, substitute heavy cream with chilled coconut cream and powdered sugar with maple syrup.
