  • 1 habanero pepper, finely minced (seeds removed for less heat)

  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Peel and dice 2 medium ripe mangoes into small, evenly sized cubes (about 1/2 inch).
  2. Wearing gloves, finely mince 1 habanero pepper. Remove seeds if a milder salsa is desired.
  3. Finely dice 1/4 cup red onion and chop 1/4 cup fresh cilantro.
  4. In a medium mixing bowl, gently fold together the mango, habanero, red onion, and cilantro.
  5. Add 2 tablespoons fresh lime juice and 1 teaspoon honey to the mixture.
  6. Sprinkle 1/2 teaspoon salt and 1/4 teaspoon smoked paprika (optional) over the salsa and stir gently to combine.
  7. Cover and refrigerate the salsa for at least 15 minutes before serving to allow flavors to meld and heat to mellow.

Wear gloves when handling habanero peppers to avoid skin irritation. Remove seeds to reduce heat. Let the salsa rest in the fridge for at least 15 minutes before serving to meld flavors. Avoid smashing mango chunks to maintain texture. Store leftovers in an airtight container in the fridge for up to 3 days. Freezing is not recommended as mango texture may become grainy.
