Flavorful Smash Burger Tacos Recipe with Creamy Secret Sauce

A quick and easy recipe combining crispy smash burger patties with a creamy, tangy secret sauce, wrapped in soft tortillas for a delicious taco twist.

  • 1 lb ground beef, 80/20 blend
  • Salt and freshly ground black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika (optional)
  • 4 slices American cheese or cheddar
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp apple cider vinegar
  • 1 tsp smoked paprika
  • Pinch of cayenne pepper (optional)
  • Salt and pepper to taste
  • 8 small flour or corn tortillas
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato, diced
  • ¼ cup finely chopped red onion (optional)
  • Pickles or jalapeños, sliced (optional)

Instructions

  1. In a bowl, gently combine ground beef with garlic powder, smoked paprika, salt, and pepper. Divide into 4 equal portions (about 4 oz each). Let rest.
  2. In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, apple cider vinegar, smoked paprika, cayenne, salt, and pepper. Refrigerate until ready.
  3. Heat a cast iron pan or heavy skillet over medium-high heat until very hot (3-4 minutes).
  4. Place one portion of beef in the skillet and press down firmly with a spatula to flatten to about ¼ inch thick. Hold for 10-15 seconds.
  5. Cook for 2-3 minutes without moving until edges are brown and crispy.
  6. Flip the patty, place a slice of cheese on top, and cook for another 1-2 minutes until cheese melts and patty is cooked through.
  7. Repeat with remaining patties.
  8. Warm tortillas in a dry skillet or microwave wrapped in a damp towel until soft (1-2 minutes).
  9. Spread a spoonful of secret sauce on each tortilla, add a smash burger patty, then top with shredded lettuce, diced tomatoes, red onion, and pickles or jalapeños if using.
  10. Drizzle more sauce on top if desired and serve immediately.

Notes

Do not overmix the beef to keep patties tender. Smash patties once and hold to create a crispy crust. The secret sauce tastes better after resting in the fridge. Keep finished patties warm in a 200°F oven if cooking in batches. Use gluten-free tortillas and check Worcestershire sauce for gluten if needed.
