A quick and easy recipe combining crispy smashed beef patties tucked into warm tortillas and topped with a creamy American cheese sauce. Perfect for casual gatherings and a delicious twist on taco night.

Ingredients

Scale
  • 1 pound ground beef (80/20 blend recommended)
  • 4 flour or corn tortillas
  • 6 ounces American cheese (block or slices)
  • 1 cup milk (whole or 2%)
  • 3 tablespoons butter (divided: 1 tbsp for skillet, 2 tbsp for cheese sauce)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional toppings: thinly sliced red onions, shredded lettuce, pickles, lime wedges

Instructions

  1. Place ground beef in a mixing bowl. Season with garlic powder, onion powder, salt, and black pepper. Mix gently to combine without overworking. (5 minutes)
  2. Heat a cast iron skillet over medium-high heat and add 1 tablespoon butter. Let it melt and become foamy but not browned. (3 minutes)
  3. Divide beef into 4 equal portions (about 4 ounces each). Roll each into a loose ball. Place one ball in the skillet and press down firmly with a spatula to flatten into a thin patty about ¼-inch thick. Hold for 15-20 seconds to sear. Cook 2 patties at a time to avoid crowding. (10 minutes)
  4. Cook patties undisturbed for 2-3 minutes until edges are crispy and browned. Flip carefully and cook for another 1-2 minutes. Remove from heat and let rest. (6 minutes)
  5. In a small saucepan, melt 2 tablespoons butter over low heat. Slowly whisk in milk, warming gently. Add chopped American cheese in batches, stirring until melted and smooth. Season with a pinch of salt and pepper. Keep warm on very low heat, stirring occasionally. (7-8 minutes)
  6. Warm tortillas in a dry skillet over medium heat for 20-30 seconds per side until soft and pliable. Wrap in a clean towel to keep warm. (5 minutes)
  7. Assemble tacos by placing a smashed burger patty on each tortilla. Drizzle generously with creamy cheese sauce. Add optional toppings like sliced onions, lettuce, pickles, or a squeeze of lime. (5 minutes)

Notes

Use a hot pan and press patties firmly to get crispy edges. Stir cheese sauce constantly over low heat to avoid clumping. Warm tortillas separately to keep them soft. Add a splash of milk if cheese sauce thickens or separates. For lactose-free or vegetarian options, substitute ingredients accordingly.
