  • 3 to 3.5 cups all-purpose flour
  • 1 tsp salt

  • 1 large egg, room temperature
  • 2 tbsp unsalted butter, melted (for glaze)
  • 1 tbsp honey (for glaze)

Instructions

  1. In a small bowl, combine warm water and 1/4 cup honey. Sprinkle yeast over the top and stir gently. Let sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together flour and salt. Make a well and pour in the yeast mixture, egg, and 4 tbsp melted butter. Mix until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. Add flour sparingly if sticky.
  4. Place dough in a greased bowl, cover, and let rise in a warm spot for 1 to 1.5 hours until doubled.
  5. Punch down dough and divide into 12 equal pieces. Roll into balls and place on a greased baking sheet, leaving space between them.
  6. Cover rolls loosely and let rise again for 30-45 minutes until puffy. Preheat oven to 375°F (190°C) during the last 15 minutes.
  7. Bake for 15-18 minutes until golden brown. Tent with foil if browning too quickly.
  8. While baking, mix 2 tbsp melted butter with 1 tbsp honey. Brush generously over hot rolls immediately after removing from oven.

Ensure water is between 105°F and 115°F to activate yeast without killing it. Do not over-flour the dough; it should be slightly tacky. For make-ahead options, shape rolls and refrigerate overnight, then let rise at room temperature before baking.
