Fresh Coconut Water Pineapple Refresher with Mint

A quick, easy, and refreshing summer drink combining fresh pineapple, coconut water, mint, and lime juice for a tropical, hydrating beverage.

Ingredients

  • 2 cups fresh pineapple, chopped (ripe and juicy)
  • 2 cups coconut water (preferably young or fresh)
  • 1012 fresh mint leaves, plus extra for garnish
  • Juice of 1 medium lime
  • 12 teaspoons honey or agave syrup (optional)
  • Ice cubes as needed for serving

Instructions

  1. Peel and chop about 2 cups of fresh pineapple into chunks. If using frozen, thaw slightly (about 5 minutes).
  2. Add pineapple chunks and 10-12 fresh mint leaves into a blender. Pulse a few times until roughly combined, then blend on medium-high for about 30 seconds until smooth but with some texture.
  3. Optional: Pour the blended mixture through a fine mesh strainer into a pitcher to remove pulp and mint bits, pressing with the back of a spoon.
  4. Add 2 cups (480 ml) chilled coconut water and the juice of one medium lime to the pitcher. Stir gently to combine. Taste and add 1-2 teaspoons honey or agave syrup if needed.
  5. Add ice cubes to the pitcher or glasses. Pour the refresher over ice, garnish with extra mint leaves, and serve immediately. If making ahead, keep refrigerated and add ice just before serving.

Notes

Use fresh mint for best flavor and bruise leaves slightly before blending. Chill coconut water and pineapple before blending for a crisp taste. Avoid over-blending to prevent bitterness. Add sparkling water before serving for a fizzy version. Store leftovers in the refrigerator up to 24 hours and stir before serving.
