  • 2 cups (480 ml) full-fat Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup (150 grams) mixed berries (blueberries, raspberries, strawberries)
  • 1 cup (100 grams) crunchy granola
  • Optional toppings: chia seeds, shredded coconut, dark chocolate chips

Instructions

  1. Line a 9×13-inch baking sheet with parchment paper, allowing extra to hang over edges for easy removal.
  2. In a mixing bowl, combine 2 cups of Greek yogurt with 2 tablespoons honey and 1 teaspoon vanilla extract. Stir gently until smooth.
  3. Pour the yogurt mixture onto the parchment-lined baking sheet and spread evenly into a roughly 1/4-inch thick layer.
  4. Scatter 1 cup of mixed berries over the yogurt, pressing lightly to stick without mashing.
  5. Sprinkle 1 cup of crunchy granola evenly on top just before freezing.
  6. Place the baking sheet in the freezer and freeze until completely firm, at least 4 hours or overnight.
  7. Once frozen, lift the bark from the parchment using the overhanging edges and break into irregular pieces. Serve immediately or store.

Notes

Use full-fat Greek yogurt to prevent iciness and keep the bark creamy. Add granola just before freezing to maintain crunch. If bark is too hard, let it sit at room temperature for 5 minutes before serving. Variations include using dairy-free coconut yogurt for a vegan option and adding lemon zest or cinnamon for flavor boosts.
