A vibrant, no-cook holiday side dish that combines tart cranberries, zesty orange, and spicy fresh ginger for a refreshing contrast to rich holiday meals.

Ingredients

  • 12 oz fresh cranberries
  • 2 large navel oranges (for zest and juice)
  • 2-inch piece fresh ginger root
  • 1/2 to 3/4 cup granulated sugar
  • 2 tablespoons water
  • Pinch of salt

Instructions

  1. Wash oranges and zest them directly into a large mixing bowl, avoiding the bitter white pith.
  2. Cut oranges in half and squeeze out the juice (about 1/2 cup), strain out seeds, and add to the bowl with the zest.
  3. Peel the ginger root and grate it finely until you have 1-2 tablespoons of grated ginger.
  4. Rinse cranberries and chop them finely by hand or pulse in a food processor 4-6 times until chopped but not pureed.
  5. Add the chopped cranberries and grated ginger to the orange mixture.
  6. Add sugar and a pinch of salt, then stir until the sugar is mostly dissolved.
  7. Taste and adjust sweetness or tartness as needed.
  8. Cover and refrigerate for at least 2 hours, preferably overnight, to allow flavors to meld and cranberries to soften.

Notes

If using frozen cranberries, thaw completely and drain excess liquid to prevent a watery relish. The flavors improve after 24 hours in the fridge. Do not freeze, as the texture will become mushy upon thawing. Store in an airtight container in the refrigerator for up to 5 days.
