  • 4 cups seedless watermelon, cut into 1-inch cubes
  • 8 ounces firm feta cheese, cut into 1-inch cubes
  • 20 fresh mint leaves, washed and patted dry
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice (optional)
  • Pinch of sea salt
  • Freshly cracked black pepper, to taste

Instructions

  1. Cut the watermelon into 1-inch cubes, removing any seeds if needed. Cut the feta into cubes of similar size to the watermelon.
  2. In a medium bowl, toss the watermelon cubes with 2 tablespoons of olive oil and 1 tablespoon of fresh lime juice. Let sit for 5 minutes.
  3. Thread the watermelon, feta, and mint leaves alternately onto skewers, leaving about an inch free at the end for handling.
  4. Preheat grill to medium-high heat (about 400°F). If using a grill pan, preheat on stove over medium-high heat and lightly oil the surface.
  5. Grill the skewers for 2-3 minutes per side until slight char marks and caramelization appear on the watermelon. Turn gently with tongs.
  6. Transfer skewers to a serving platter and sprinkle lightly with sea salt and freshly cracked black pepper.
  7. Serve immediately warm or at room temperature.

Notes

Soak wooden skewers in water for 20 minutes before grilling to prevent burning. Watch grill temperature carefully to avoid burning watermelon or crumbling feta. Serve immediately for best texture and flavor. Can substitute feta with firm vegan cheese or marinated tofu for dairy-free option.
