  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste
  • 1 loaf French baguette or rustic Italian bread, sliced about 1/2-inch thick
  • Optional: fresh mozzarella balls or slices for layering

Instructions

  1. In a mixing bowl, combine the diced tomatoes and chopped basil.
  2. Mince the garlic finely and stir it together with the olive oil in a small bowl to mellow the raw garlic’s edge.
  3. Pour the garlic-infused olive oil over the tomatoes and basil.
  4. Add balsamic vinegar, then season with salt and freshly ground black pepper to taste.
  5. Gently toss everything together so the flavors meld but the tomatoes remain intact.
  6. Let the mixture sit at room temperature for about 10 minutes to develop flavor.
  7. Preheat oven to 400°F (200°C) or heat a grill pan over medium-high heat.
  8. Arrange the baguette slices on a baking sheet or grill pan and toast until golden and crisp, about 3-5 minutes per side.
  9. Arrange toasted bread slices on a serving board.
  10. Spoon the tomato basil topping generously on each slice.
  11. If using, add fresh mozzarella slices or balls around the board.
  12. Drizzle a little extra olive oil over the assembled bruschetta and scatter whole basil leaves for garnish.
  13. Serve immediately to keep the bread from getting soggy.

Notes

Toast the bread just before serving to prevent sogginess. Gently drain excess tomato juice if tomatoes are watery. Mellow garlic by mixing it with olive oil before adding to the topping. Use ripe tomatoes for best flavor. Prepare extra topping as it’s the best part and guests often want seconds.
