Instructions

  1. Rinse about 1 cup of fresh strawberries and remove the hulls. Finely chop them into small pieces and set aside.
  2. In a medium bowl, combine 8 ounces of softened cream cheese with 1 tablespoon honey, 1 teaspoon vanilla extract (if using), and 1 tablespoon powdered sugar. Stir gently until smooth and creamy.
  3. Fold the chopped strawberries and finely chopped fresh mint leaves into the cream cheese mixture.
  4. Lay out 6 to 8 slices of soft sandwich bread. Trim off the crusts. Using a rolling pin, gently flatten each slice to make it easier to roll without cracking.
  5. Using a spreading knife or offset spatula, evenly spread a generous layer of the strawberry cream cheese mixture over each slice of bread, covering the entire surface.
  6. Starting from one edge, carefully roll each slice into a tight cylinder. Wrap each roll tightly in plastic wrap or parchment paper and refrigerate for at least 15 to 20 minutes.
  7. After chilling, unwrap the rolls and slice each into 1-inch pinwheels using a sharp knife. Wipe the knife clean between cuts if needed.
  8. Arrange the pinwheels on a serving platter and serve immediately or store covered in the refrigerator for up to 24 hours.
