A light, refreshing summer salad combining sweet strawberries, crisp baby spinach, and a creamy poppy seed vinaigrette, perfect for quick meals or gatherings.

  • 5 cups fresh baby spinach
  • 2 cups strawberries, hulled and sliced
  • ½ cup sliced almonds, toasted
  • ½ cup feta cheese, crumbled (optional)
  • ¼ cup red onion, thinly sliced
  • ⅓ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon poppy seeds
  • Salt and black pepper to taste

Instructions

  1. Rinse baby spinach thoroughly in cold water and dry completely using a salad spinner or towel.
  2. Hull and slice strawberries into thin, even pieces. Thinly slice red onion and set aside.
  3. Toast sliced almonds in a dry skillet over medium heat, stirring frequently until golden and fragrant, about 3-4 minutes. Transfer to a plate to cool.
  4. In a medium bowl, whisk together mayonnaise, apple cider vinegar, honey, olive oil, and poppy seeds until smooth and creamy. Season with salt and pepper to taste. Add water a teaspoon at a time if dressing is too thick.
  5. In a large salad bowl, combine baby spinach, sliced strawberries, red onions, and half of the toasted almonds.
  6. Pour the poppy seed vinaigrette over the salad and gently toss until evenly coated. Taste and adjust seasoning if needed.
  7. Serve salad on plates or family-style, garnished with remaining toasted almonds and crumbled feta cheese.

Notes

Dry spinach thoroughly to avoid soggy salad. Toast almonds carefully to prevent burning. Keep dressing separate until serving if preparing ahead. Substitute feta with avocado for dairy-free option. Use maple syrup instead of honey for vegan dressing.
