Instructions

  1. Prepare the tomato mixture by dicing 3 cups of fresh tomatoes into small pieces. Toss in a bowl with 2 tablespoons olive oil, 1 clove minced garlic, 1/4 cup chopped basil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon balsamic vinegar if using. Let sit for 10-15 minutes at room temperature.
  2. Slice rustic bread into 1/2 inch thick pieces. Heat a skillet or grill pan over medium heat. Brush each slice lightly with olive oil or softened butter on both sides.
