A quick and refreshing summer snack combining sweet watermelon, salty feta, fresh mint, and a tangy balsamic glaze for a perfect bite-sized treat.

  • 3 cups fresh seedless watermelon, cut into 1-inch cubes
  • ½ cup crumbled feta cheese (preferably creamy Greek feta)
  • Fresh mint leaves, whole or chopped
  • Balsamic glaze, for drizzling (store-bought or homemade)
  • Extra virgin olive oil (optional, for drizzling)
  • Freshly ground black pepper, a pinch
  • Sea salt (optional, to taste)

Instructions

  1. Cut fresh watermelon into 1-inch cubes, removing rind. Use a sharp knife for neat cubes.
  2. Crumble feta cheese into small bite-sized pieces.
  3. Rinse fresh mint leaves and pat dry. Leave whole for garnish or chop finely.
  4. Arrange watermelon cubes evenly on a serving platter.
  5. Top each watermelon cube with a small crumble of feta and a mint leaf or sprinkle of chopped mint.
  6. Drizzle balsamic glaze lightly over the assembled bites using a spoon or squeeze bottle.
  7. Sprinkle a small pinch of freshly ground black pepper over the top.
  8. Add sea salt if needed, depending on feta saltiness.
  9. Optionally, drizzle a small amount of extra virgin olive oil just before serving.
  10. Serve immediately or within 30 minutes to avoid sogginess.

Notes

Assemble shortly before serving to prevent watermelon from becoming soggy. Use fresh mint for best flavor. For homemade balsamic glaze, simmer balsamic vinegar with sugar until syrupy. Optional olive oil drizzle adds richness. Can substitute balsamic glaze with honey or citrus vinaigrette. Vegan option: replace feta with marinated tofu or vegan cheese.
