A refreshing summer salad combining sweet watermelon, salty feta, fresh mint, and a tangy balsamic drizzle. Quick and easy to prepare, perfect for hot days and gatherings.

  • 4 cups watermelon, cubed (ripe and seedless)
  • 1 cup feta cheese, crumbled
  • 1/3 cup fresh mint leaves, chopped
  • 2 tablespoons aged balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey or maple syrup (optional)
  • Pinch of freshly ground black pepper (optional)
  • Pinch of sea salt

Instructions

  1. Cut about 4 cups (around 600 grams) of seedless watermelon into bite-sized cubes, keeping pieces uniform.
  2. Rinse fresh mint leaves under cold water, pat dry, then finely chop about 1/3 cup (around 10 grams).
  3. In a small bowl, whisk together 2 tablespoons (30 ml) aged balsamic vinegar, 1 tablespoon (15 ml) extra virgin olive oil, and 1 teaspoon (5 ml) honey or maple syrup if desired until slightly thickened and glossy.
  4. In a large mixing bowl, gently toss the watermelon cubes with the chopped mint.
  5. Add 1 cup (150 grams) crumbled feta cheese on top.
  6. Drizzle the balsamic mixture evenly over the salad and toss lightly to combine, being careful not to break the watermelon or feta.
  7. Sprinkle a pinch of sea salt and freshly ground black pepper to taste, then give one last gentle toss.
  8. Transfer the salad to a serving bowl or platter and serve immediately.

Notes

To keep watermelon crisp, add dressing just before serving. Use ripe watermelon with a creamy yellow spot for best sweetness. Toss gently to avoid breaking watermelon cubes. For vegan option, substitute feta with dairy-free feta or marinated tofu. Leftovers can be refrigerated for 1-2 days but expect some juice release.
