  • 1 medium yellow or white onion, finely diced
  • 1 medium red or green bell pepper, finely chopped
  • 1/2 cup apple cider vinegar (120 ml)
  • 1/4 cup granulated sugar (50 g)
  • 1 teaspoon salt (5 g)
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup water (60 ml)
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Wash zucchini and bell pepper thoroughly. Trim zucchini ends and remove seeds from bell pepper. Finely chop zucchini, onion, and bell pepper into about 1/4-inch dice.
  2. Place chopped zucchini in a large bowl, sprinkle with salt, toss gently, and let sit for 15 minutes. Afterward, squeeze out excess liquid using a clean kitchen towel or cheesecloth.
  3. In a separate bowl, combine apple cider vinegar, sugar, mustard seeds, celery seeds, black pepper, and water. Stir until sugar dissolves.
  4. Add drained zucchini, onion, and bell pepper to the vinegar dressing. Toss gently but thoroughly to coat evenly. Let sit at room temperature for 10 minutes before refrigerating.
  5. Transfer relish to a clean glass jar or airtight container. Refrigerate for at least 2 hours before serving; flavors improve after 24 hours. Stir before serving if liquid separates.
