  • 1/2 cup (115g) unsalted butter, melted and slightly cooled (use dairy-free butter if needed)
  • 3 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup (90g) dark chocolate chips or chunks

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together almond flour, cocoa powder, sugar, salt, baking powder, and espresso powder (if using) to combine evenly.
  3. Melt the butter gently and let it cool slightly.
  4. In a separate bowl, whisk the eggs, vanilla extract, and melted butter until smooth.
  5. Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined; avoid overmixing.
  6. Fold in the dark chocolate chips or chunks.
  7. Transfer the batter evenly into the prepared pan and smooth the top.
  8. Bake for 22 to 27 minutes, checking at 22 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter.
  9. Cool completely on a wire rack for at least 30 minutes before slicing to set the fudgy texture.
