Fun Monster Eyeball Deviled Eggs: Easy Halloween Recipe

These spooky yet delicious deviled eggs are perfect for Halloween parties. With a creamy, tangy filling and black olive pupils, they are a fun, easy-to-make appetizer that kids and adults will love.

  • 6 large eggs, hard-boiled and peeled
  • 1/3 to 1/2 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon pickle juice
  • 2–3 dashes Worcestershire sauce
  • Salt and black pepper to taste
  • Black olives, sliced into thin rounds
  • Red food coloring mixed with water (optional, for bloodshot effect)
  • Chives or green onion, chopped (optional, for eyebrows)

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water by an inch. Bring to a rolling boil, then remove from heat, cover, and let sit for 12 minutes.
  2. Transfer eggs to an ice bath and cool for at least 15 minutes. Peel carefully and rinse under cold water.
  3. Cut eggs in half lengthwise. Scoop out yolks into a small bowl, reserving the whites on a plate.
  4. Mash yolks with a fork until fine. Add mayonnaise, Dijon mustard, pickle juice, Worcestershire sauce, salt, and pepper. Mix until smooth.
  5. Transfer filling to a piping bag fitted with a star tip. Pipe filling into egg white halves, starting from the center and spiraling outward.
  6. Top each mound with a slice of black olive, pressing gently to adhere.
  7. For a bloodshot effect, dab a tiny amount of red food coloring mixture onto the white with a toothpick. Add chive eyebrows if desired.
  8. Refrigerate for at least 30 minutes before serving chilled.

Notes

Use eggs that are at least a week old for easier peeling. Do not overcook eggs to avoid a green ring around the yolk. For a dairy-free version, swap mayonnaise for vegan mayo or avocado. Store in an airtight container in the refrigerator for up to 3 days. Do not freeze.
